

If you thought that oats were just for making cereal
with, think again....

Scottish Oat Cookies
1/4 cup brown sugar
1/4 sugar
7/8 cup butter
2 tablespoons corn syrup
5/8 cup flour
1 teaspoon baking powder
1 1/3 cups rolled oats
1 egg
Preheat the oven to 350 degrees. Beat the
butter with the sugars until light and fluffy. Add the egg and syrup and
mix well. Sift in the flour and baking powder and add the oats. Stir
until well mixed together. Put heaped teaspoons of the mixture onto a
greased cookie sheet and flatten slightly. Bake for 12 minutes then lift
onto a cake rake. The cookies will be slightly soft, but they'll become
firm and chewy when they cool down.
