Pizza Base
makes 2 bases

1 teaspoon dried yeast
5 ounces warm water
2 1/4 cups flour
1/2 tablespoon olive oil

Sift the flour into the bowl and add the dried yeast.  Add the water and the oil; stir thoroughly until it forms a dough.  Knead until smooth and stretchy.  Cover with a damp cloth and leave to rise for 30 minutes.  Grease two round 10-inch pizza pans.  Halve the dough and press each half into a pan.  Spread the bases with your choice of toppings and bake for 25 minutes at 350 degrees.

Toppings

One of the most fun things about pizzas is that you can mix and match the toppings to your heart's content.  Here are a few your might like:

For a basic pizza, spread tomato paste or pasta sauce over the dough.  Top with grated cheese, some dried oregano and few slices of tomato.

For a breakfast with a difference, try adding some bacon and a fried egg.

Leave off the cheese and add tuna fish, shrimp (or any other shellfish), olives and red and green peppers for a colorful Mediterranean-style pizza.
